Miso Glazed Salmon

I know this dish was inspired by Nobu’s famous miso cod, but the version that stuck with me was the miso salmon at The Cheesecake Factory. I liked it enough that I didn’t want to rely on going to the restaurant every time I had a craving, so I decided to try making it myself.

Ingredients

Salmon

  • Salmon, preferably skin-on, cut into 1.5-inch strips

Marinade

  • 1/2 cup white miso paste (Shiro miso)
  • 1/4 cup sugar
  • 1/4 cup sake
  • 1/4 cup mirin
  • 1/2 tbsp soy sauce

Directions

In a bowl, stir together all of the marinade ingredients until smooth.

Place the salmon in a large flat container or zip-top bag and pour the marinade over it. Lay the salmon skin-side up and make sure each piece is well coated.

When ready to cook, remove the salmon from the marinade and wipe off the excess. It does not need to be completely clean.

Place the salmon skin-side down on a parchment-lined baking tray.

Broil at 450°F for 10 to 12 minutes, or until the salmon is lightly browned and cooked through.

Serve over rice or on top of a bed of vegetables.
