Pork Bone Soup (My Mom's Recipe)
This is one of those dishes I grew up with. My mom used it as the base for so many things she made — birthday noodles, hotpot, and all kinds of dishes that needed a good stock. It’s savory, a little sweet, and still one of my favorite soups.
One day, I asked her to teach me how to make it. She stood there patiently, showing her son who had never really cooked before, how to make this soup from scratch. I wanted to preserve her recipe, so here it is.
Ingredients:
- Pork Neck Bone
- Daikon Radish
- Chicken Stock
- Chicken Bouillon
- Salt
Directions:
Bring a pot of water to a boil and blanch the pork neck bone for around 5 minutes.
Remove the bones and rinse in running water.
Wash out the pot and put the pork neck bone back
Add 4 cups of chicken stock and 4 cups of water.
Bring it to a boil, then stir in half a chicken bouillon cube.
Add roughly chopped daikon radish.
Lower the heat and simmer for about 1 hour.
Season with salt to taste.
